Chicken Pot Pie

I told you that I was going to be on the lookout for healthy recipes for the family, so today I want to share with you a great blog called Carroll Creations! (you can find the link on my sidebar as well)

Sarah Kay Carroll is a dear friend of mine and she has started a fantastic blog, where she shares her creations...mostly food, but also sewing and photography!

She is married to Jonny, a very talented photographer, who takes the pictures for her blog!

I have asked Sarah Kay to do a guest post for me because all of her recipes are easy and healthy, which I love.

Plus, she does a great job of telling you exactly what to do (which is great for those of us who do not have a clue about cooking) and she even gives you a picture of what it is supposed to look like!

So now, I will turn it over to her!

First of all, I am so excited to "guest post" on somebody else's blog. Especially on Worthy of the Prize - what a great ministry it is! A ministry that is focused on health and wellness but most importantly on developing a relationship with Christ. God is so good and has been working in my heart greatly. This past Sunday, we sang "Lead Me to the Cross" at the church that I attend. The lyrics in the song really convicted humility in me and also a remembrance of Easter coming up soon. The song says, "Lead me to the cross where your love poured out. Bring me to my knees, Lord I lay me down. Rid me of myself, I belong to you. Lead me, lead me to the cross." The love Jesus showed through the cross is indescribable. To really remember how intensely he suffered, the way he took the wrath of God onto himself that we deserved, is something that does bring me to my knees and fills me with joy and an abundant amount of gratitude for our Lord. All that to really say - God is good!

Onto the recipe! My main goal in finding and sharing recipes is to have a meal that is going to be relatively simple and healthy. This chicken pot pie is just that! This is from Betty Crocker and I just have a small thing I do different. For the original recipe, it makes one big pie that you can divide into about 4 servings. Instead, my husband came up with the idea to have individual pot pies. I make them in the small Corningware containers and they come out in all different sizes. I love it. Another thing I love about it? The nutrition facts!

Chicken Pot Pie
Ingredients:
1 cup of cut-up cooked chicken (I use 2 chicken breasts and usually have a little extra)
1 bag frozen mixed veggies - thawed
1 can 98% fat-free condensed Cream of Chicken soup
1 cup skim milk
1 cup Bisquick Heart Smart mix
1 egg

Directions:
1. Heat oven to 400 degrees.
2. In ungreased bowl - mix chicken, vegetables, soup, and 1/2 cup milk. Microwave mixture on high for 4 minutes, stir.
3. In small bowl, stir Bisquick mix, 1/2 cup milk and the egg with a fork until blended. Pour this over the veggie mixture. (If doing individual pies, divide the veggie mixture first, then pour the Bisquick mix over each one)
4. Bake uncovered for 30 minutes (or about 20 minutes with individuals) or until golden brown.

This is a favorite around our house, one because it is super delicious and healthy, but also because it is great as leftovers. With only 2 of us, we have leftovers a lot and this meal tastes great the next day. Hope you enjoy!

Wow Sarah Kay, what a great post!! I checked out your blog and I love it. I will definately be following and trying recipes! Chuck and I have been talking about cooking more and really eating healthy, this will really help us out! Thanks for being so awesome!!!
