It was rainy and cold here in East Tennessee this past weekend. All day Saturday we were bundled up, out and about at t-ball games, among other things, and all I wanted to do was go home, cuddle up by the fire and eat a warm bowl of soup. It was just that kind of day.
I had seen this Crock Pot Potato Soup recipe floating around Pinterest and I finally had the chance to try it out. It would be perfect for an indoor game watching party and it is SO easy to make!
1 (30 oz.) bag frozen hash-brown potatoes (I use the squared, southern style)
2 (14 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/3 tsp. ground black pepper
1 (8oz) package cream cheese (softened)
Garnish: minced green onion
Directions:
1. In a slow cooker, combine potatoes, broth, soup, onion, and pepper.
2. Cover, and cook on low for 5 hours.
3. Stir in cream cheese, cook 30 minutes, stirring occasionally, until combined.
4. Garnish with green onion.
I actually used 1 tbsp. of onion powder instead of the chopped onion (because I am too lazy to chop onions). I did not top with minced green onion, for the same reason, not to mention Big A doesn't like them. Instead, I topped with shredded cheese and bacon bits, because I had them on hand. Otherwise, I followed the recipe exactly.
You could even have a "toppings bar" at your party, letting your guests choose from all sorts of toppings for their soup...shredded cheese, chives, bacon bits, sour cream, etc. Then serve with crackers or bread.
In my opinion, the soup has a delicious flavor but when I make it again, I will definitely use more broth and possibly less cream cheese because it was SUPER thick and creamy...like you could serve it as a side dish (very much like mashed potatoes).
What I love about it is how EASY it is to make and the fact that it would feed a lot of people!

Just wondering...does the use of 2 cans of chicken broth PLUS a can of cream & chicken soup give it a real chicken-y flavor? Not a huge fan of chicken, so that worries me a bit. If you thought it was too thick, maybe it would be best to omit the can of cream of chicken altogether? Seems like you wouldn't miss it.
I loved the flavor and no, I would not say it was too chicken-y! But I do want to figure out a way to thin it out a bit and leaving out the cream of chicken soup might be a possibility? I don't know for sure, just gonna have to play around with it a little! It was delicious, just super thick and creamy in my opinion! :)
Made this today. Used the southern style (cubed) potatoes and followed the recipe. I just added chopped carrots, fresh mushroom and some ham cuz I had some. Only had 4oz of cream cheese and it turned out the right consistancy. Added a little cracked pepper. Perfect! Thank you!

I made this today (only the pin i saw on Pinterest said it was a martha stewart recipe- hmmm...) :) Anyway, I loved it thick so I thought it was perfect but I still may try the cutting out a bit of the cream cheese the next time also just to give it a try.
BTW- I live in East Tn also (in Knoxville) :)
I have made this a few times. I use 1 1/2 boxes of chicken broth shredded hash browns cream of cheader soup frozen chopped onions dash of garlic powder and pepper. I let me cream cheese set all day by the crock pot while cooking and well I LOVE it
I have made this twice in the last month. I did the recipe exactly. I ganished with real bacon bits. It is a fantastic meal on a cold day. I love this. Thank you!

Thanks for the recipe. I'm just starting out and this is my first crock pot meal I've ever made. It was delish!
I made this recipe but doubled the cream of chicken soup and increased the chicken stock by 2.5. I also added leftover mashed potatos and a package of cooked and chopped bacon. Sprinkled with cheese and chives and it was ready to go. I also cooked the cream cheese in from the beginning. I would say it was a significant improvement over the original recipe! I also added several herbs and spices!
I made this recipe today but did several things which I think significantly improved the flavor! I also added a package of cooked and chopped bacon, additional seasonings, and 4 cups of mashed potatoes. Sprinkled it with cheese and chives and it was amazing!

My husband loves this. I've never really been a soup person but its pretty good. I mostly make it for mynhusband and 2 year old. I've actually made this 2 days in a row now. We top ours with bacon bits and shredded cheese.

I just put this in the crock pot. I took your suggestion and doubled the chicken stock (using bouillon and water for some since I did not have enough on hand), I also doubled the cream of chicken soup,minced 2 cloves of garlic and added about 2 cups of diced ham I had in the freezer waiting to be used. I made this yesterday. I only used half of the cream cheese and I added some shredded carrots. I only had the shredded type of hash browns in the freezer...I had crumbled bacon and grated cheddar cheese for toppings....it was delicious!!
I was telling the store clerk about how great this soup was. It took me forever to look for the receipe,which I couldn't find. I found yours but when I made the other receipe I had it was to runny,so I added some instant potatoes and,2 tbs butter.Yours is great! I top mine with cheddar, green onions,and a little bacon. The best easy potato soup! LOVE,LOVE, IT

I've made this a few times. The first time, I had not chopped the onions small enough...they were chunky...and they didn't cook well in the crockpot. Now, I chop them smaller and usually sauté briefly before throwing in the crockpot. Even with the first raw onion batch, people loved it and asked for the recipe. The cream cheese makes it so don't leave it out!

I just made this today for supper, and it is fabulous! I did use the onion powder instead of real onions and added more chicken stock and only 5oz of cream cheese... so it was not so thick. I also fried some bacon and added in to the soup. It was delish! Thank you!

We always add white corn and diced roasted chicken to this same recipe and more chicken broth than it calls for to thin it out! Yummy chicken corn potato chowder :)
We ate this for lunch today. It was good. The consistency was perfect. It looked like it was gonna be a little bland, so I added chopped carrots, celery, peppers and 1/2 a seeded jalapeno pepper. Thanks for sharing. I would definitely make this again.

This was delicious! Followed the recipe plus added a small carton of whipping cream toward the end with the cream cheese. Yummy!
OMG I just made this again using cheddar cheese soup instead of the cream of chicken. Added the small carton of whipping cream with the cream cheese again. Whole family likes this even better than before!
I made it vegitarian style subing the chicken broth for vegi broth and used 4 oz cc and 8 oz heavy whiping cream added celery yummy if its to thin add a tabelspoon of ap flour
Those are just soup recipes which is good for the rainy days.

I made this, and was very good, except it was a little soupy so I did add some potato flakes to thicken it up a bit, and it was delicious!! I am actually making it again tomorrow and will be adding some ham pieces (farmland) to it .. Definetly love this soup!
Loved the soup! I did have to add some instant potatoe flakes to it as mine turned out a little soupy but was very good! Added green onions, bacon pieces and cheese on top! I am actually making this again tomorrow for dinner and adding some Farmland Ham pieces to it! Can't wait!

I added cubed beef summer sausage to the recipe and only used 1/2 the cream cheese and a couple extra oz of broth... super yummy!

I've made this a few times and I actually crave it now! I always use fresh peeled potatoes because I have them on hand and that has to be slightly more healthy. Yukon Gold potatoes and sweet yellow onion makes a very buttery soup. I also use only half the cream cheese and then use an immersion blender to thicken it and break up the larger chunks. Sharp cheddar on top makes it perfect! In the crock pot right now!

Made this tonight and wanted to make it gluten-free so I just made sure the broth was gluten-free (Swanson is) and instead of Cream of Chicken soup, used Progresso Creamy Mushroom which is gluten free. It was delicious!

This recipe is well adapted to clam chowder substituting cream of chicken with clam juice (1 bottle) and adding clams (one can) with juice. In this adaptation only one can of chicken broth is needed. 1/2 stick of butter after the cream cheese gives a better flavor for clam chowder.
I had to change a couple things (I left out the onions or black pepper because they upset my stomach...and I added ham.) It is sooooo goooooood!!! SO. GOOD. I made it two weeks ago and I made myself wait until now to make it again. :) I was too lazy to go to the store earlier so I am going to try it on the stove top. We will see. (I tried freezing it. It separated. So I whisked it with a little milk after reheating and it tasted wonderful!)
Finally got around to trying this recipe, and I'm so glad I did. Absolutely delicious and easy to make. Plus, it made the house smell amazing!
I have this in my crock pot right now. I added some chopped up baby carrots and about a half a diced red pepper. I also added garlic powder and salt, and only 4 oz. of cream cheese. Can't wait to taste smells delicious!
